Yacon (scientific name: Smallanthus sonchifolius), also known as snow lotus root or snow lotus fruit, is referred to as "wan gen tiao" in Sichuan, China. It is a perennial herbaceous plant in the Asteraceae family, native to the Andes Mountains in South America. The residents of the Andes cultivate this plant as a root vegetable. The tubers of yacon are rich in moisture and fructooligosaccharides, giving them a sweet and crunchy taste, and they can also be consumed as fruit. In the markets of Taiwan, vendors sell yacon tubers under names such as "underground fruit" or "Tianshan snow lotus." However, it is important to note that yacon and snow lotus flowers are two different plants.
