Garlic (scientific name: Allium sativum), also known as common garlic, is believed to have originated from the Western regions and is referred to as "hu suan" (胡蒜) in ancient China. It is sometimes called "the penicillin of the Russians." The underground bulb, known as garlic cloves, has a pungent flavor and an irritating odor, and it can be used as a seasoning as well as for medicinal purposes. The leaves of garlic are referred to as green garlic or garlic sprouts, while the flower stalks are called garlic scapes, both of which can be consumed as vegetables. Garlic is considered one of the "five pungent spices."
