The bamboo squash (scientific name: Cucurbita maxima), also known as Indian pumpkin, is a plant in the gourd family (Cucurbitaceae) and belongs to the pumpkin genus. It is native to the temperate regions of central South America and is widely cultivated around the world. Indian pumpkin is one of the most diverse cultivated crops. The Chinese name "笋瓜" (bamboo squash) refers to the summer tender fruits of the Indian pumpkin, named for their crisp texture. Giant pumpkins also originate from this species.
