Baby bok choy (scientific name: Brassica rapa chinensis, also known as Brassica campestris chinensis or Brassica chinensis) is also referred to as "non-heading cabbage" or "leafy cabbage," in contrast to Chinese cabbage (heading cabbage). It is a vegetable native to East Asia. Due to the numerous varieties and differing characteristics, it is known by various local names, such as green vegetable, oil cabbage, small mustard greens, tower vegetable, flattening vegetable, flattening stem vegetable, flattening ground pine, black vegetable, dark green vegetable, oilseed rape, small oilseed rape, and vegetable shoots. Even the green-stemmed bok choy (qingjiangcai) is one of the varieties of baby bok choy. Baby bok choy and Chinese cabbage are close relatives, both belonging to the Brassica family, and are also closely related to Western cabbage, all of which are part of the Brassicaceae family.
